So this is one of my first ever attempts at making something COMPLETELY on my own with NO recipes! I just took some ingredients, threw it in the crockpot and hoped it would turn out well. haha! Lucky for me, it not only turned out well enough to EAT, but my family LOVED and it turned out so good that I even decided to make a blog post about it. One of the things I love about this meal that I put together is that it’s super basic, so it can be doctored up or kept the same. There’s an endless amount of ways you can make this different each time you make it.I’m looking forward to adding this one to our winter meal rotation and doing just that! I would also LOVE to hear your feedback on it and ways that you spice it up and make it your own.
3 Chicken Breasts
1 tablespoon minced garlic
1 tablespoon cumin
1 cup chicken stock
Dump everything into the crock pot. Turn it on. Wait.
lol but seriously…it really is that easy. I cooked it on high for about 3 hours until the chicken fell apart. You could also cook it on low for probably 6 and have it turn out just right.
It turned out a little thicker than I normally would have liked it, so next time I will probably double the chicken stock amount and/or add an extra packet of the chicken taco seasoning. At this consistency though, my husband was also able to eat it as a “chicken dip” with tortilla chips, so it could totally make a great party appetizer.
